One of my favourite winter drinks is a peppermint hot chocolate. It's the perfect combination of sweet and minty! I decided to create my own version of the Peppermint Hot Chocolate or Peppermint Mocha (you can always leave out the peppermint if you're not a fan— it's still a delicious hot chocolate recipe!) that you might find at Starbucks and it is pretty delicious if I do say so myself. Plus, you can customize it to your own preferences!

Here's How to Make the Easiest & Most DELICIOUS Peppermint Hot Cocoa (Dairy-Free):
Ingredients

1 cup unsweetened soy, almond, or cashew milk (I used Oat)

1/8 cup vegan chocolate chips or 15g of a chocolate bar (you can also use 2-3 tbsp of cocoa powder instead)

1 tbsp sugar (I used Agave)

½ tsp vanilla extract

1/8 – 1/4 tsp peppermint extract (you can use a peppermint tea bag instead, by steeping the teabag in the hot cocoa mixture, remove the tea bag and enjoy!)

Pinch of salt (optional)

Optional: Vegan whipped cream and vegan marshmallows for serving

Optional: You can add coffee or an espresso shot to this to make it a Peppermint Mocha!
Directions

Add your plant-based milk and chocolate to a small saucepan. Use a whisk to stir the milk and chocolate as you heat it over medium-low heat until the chocolate has melted; make sure not to boil the milk. Add the rest of the ingredients and mix until combined.

Pour into a mug and top with whipped cream and marshmallows. Enjoy!
